Klarmaya Yeast is an Instant-yeast with considerably higher fermentation activity than traditional yeasts. It is a specially selected strain of saccharomyces cervisiae produced by a special fermentation process and patented drying process. Klarmaya Yeast consists of small oblong particles with a porous structure. This permits use in dough without prior rehydration. It is got rich by vitamins B1, B5, and Biotin, tan-coloured, free-flowing granules with a slight yeasty aroma. Klarmaya Yeast is designed for use in high-sugar doughs with 10% sugar and over.

APPLICATIONS

Klarmaya Yeast is designed for optimal use in sweet doughs and other yeast-raised products containing over 10% sugar, such as sweet breads, Danish and donates.

 

 

 

PACKAGING

Klarmaya Yeast is vacuum-packed in 500 g (17.66 oz) packages, 20 per case, and 20 kg (44 lb) packages for industrial users, resulting in a solid, hard block. Once opened, it becomes a free-flowing granular powder.

 

 Important: packages must be hard prior to opening. If packages is soft, do not use.

STORAGE

This unique packaging permits storage of unopened packages at room temperature (23°C/75°F) or less for two years.

 

Note: after opening, close package and store in an airtight container. If unrefrigerated use within one week.

 

 

 

DOSAGE

KLARMAYA Yeast performs best at room temperature. The high fermentation activity of Klarmaya Yeast permits use in lower quantities than required for Klarmaya 5-star. In a 15% sugar dough, dosage of Klarmaya Yeast can be reduced 15% compared to Klarmaya 5-Star. In 20% sugar dough, dosage of Klarmaya Yeast can be reduced 20%.
